Three-ingredient linguine with pistachio cream

A linguine with pistachio cream recipe that relies on just three main ingredients has gained attention for its simplicity and luxurious finish. The dish serves four and centers on high-quality pasta, roasted pistachios, and Grana Padano DOP cheese. While the ingredient list is short, the technique requires careful attention to texture and temperature to achieve a smooth, velvety sauce.

The process begins by shelling 250 grams of pistachios and blending them finely with a quarter of a garlic clove. The amount of garlic is adjustable based on personal preference, though it can be omitted entirely for a milder profile. While the nuts are being prepared, a pot of salted water is brought to a boil for the 320 grams of linguine.

In a separate pan veiled with oil, the chopped pistachios are heated gently. Constant stirring is required to prevent burning and ensure even toasting. A ladleful of pasta cooking water is added to the nut mixture, and the chef continues stirring until the mixture transforms into a creamy consistency. More water is added as needed to adjust the texture, with salt seasoned to taste.

Traditional Italian pasta dishes often rely on emulsifying starchy water with fat, but this method swaps the usual butter or cream for ground nuts. This approach leans into the natural oils of the pistachios, creating a sauce that feels richer yet less heavy than a standard cream-based preparation. It’s a technique that turns a simple nut into the primary flavor carrier.

Once the linguine is drained while still al dente, it is transferred directly into the pistachio pan. A little more water is added to complete the cooking process. The heat is turned off, and the pasta is finished with grated Grana Padano DOP. The amount of cheese is left to individual preference, allowing for a lighter or heavier finish.

To plate the dish, a couple of forks of linguine are scooped into a ladle and rolled repeatedly. This action forms a tight nest, which is then carefully transferred to the plate. The remaining cream in the pan is drizzled over each nest. A final topping of grated cheese and pistachio granules is added before serving.

For a fresh finish, the recipe suggests adding thyme, marjoram, or lemon zest. A grinding of black pepper can also be included to taste. The linguine should be served immediately, piping hot, to maintain the integrity of the nut-based cream.
